lanark blue - ogcastle, lanarkshire, west scotland
one of the first blue ewes milk cheeses but cannot be claimed to be the 'first ever' as the french monks of the great yorkshire abbeys cannot have been ignorant of roquefort. a rich blue veined artisan cheese from the sheep that graze on hillsides rich in herbs and clover a thousand feet above sea level, overlooking the valley of the upper clyde.

mrs kirkams ‘lancashire’ – goosnargh, lancs
a 'tasty lancashire' made with the curds of three consecutive milkings. made from the milkof their friesian holstein cows, to create a mild crumbly smooth tangy cheese. in 1939 there were 202 farms turning out 1260 tons of ‘lancashire’ every year, today there are only three making the real unpasteurised cheese, all in the preston area.

stinking bishop - dymock, gloucestershire
made at laurel farm by charles martell, it’s renound for its pungent & spirited aroma, as the cheese is immersed in perry made from the local stinking bishop pear.

vulscombe goat - tiverton, devon
hand made by graham, a retired mathematician, & josephine townsend on their farm near tiverton, a soft fresh goats cheese, with a hint of citrus fruit.

dorset drum cheddar- bridport, dorset
matured for 6-9 months producing a smooth creamy medium strength cheddar, made on the denhay farm, from milk from the friesian holstein cows, selected for the high protein quality of their milk. in summer they go out to graze the grass in the fields. in winter they are kept indoors & fed on a diet of grass and maize silage. whilst inside, every cow has a mattress on which to lie.
